Happy Valentines Day: How He Loves

I'm not a super big fan of Valentines Day - I don't remember making a huge deal about it when I was married, but now that I'm not it's even less interesting...the exception being the vast amounts of chocolate that will be on sale tomorrow. That interests me greatly. But today I'm thinking about the greatest love I'll ever know - God's love toward His children. It is wonderful, and overwhelming, and completely undeserved, but it is there. Adventures in the Kitchen: Chicken Wraps - with lettuce?!

The problem So last night I put some chicken breasts in the fridge to defrost. After lunch today I was faced with a dilemma - I had some lettuce, tomatoes, & green bell peppers that needed to be used within the next few days or risk them going to waste. I pulled up Food Network , and Martha Stewart's website to try and find something to make. Meanwhile I sent out a tweet asking for ideas and I also pulled My Fridge Food , plugged in some ingredients and started reading. I take food going to waste pretty seriously. I had a few things that looked interesting and with some encouragement I decided to go the wrap route...but instead of going and buying tortillas I decided to use the lettuce as the thing to hold everything together. They say a picture is worth a thousand words How I got it Dice two chicken breasts, a tomato, and a bell pepper. Slice a potato and a cucumber. Mince a clove of garlic. Season liberally with salt & pepper. Heat a skillet with olive oil

Reason #8525265 why LifeHacker.com is awesome. My kids downed the last of the chips while being snowed in during Snowpocalypse 2011, so frying up my own is a great alternative - and much more fresh. Put at least 1 inch of oil in a deep pan on the stove and turn the heat to medium-high; bring to 350°F. The broader the vessel, the more of these you can cook at once, but the more oil you will use. (They cook very quickly, so don't worry if your pan is narrow.) Stack the tortillas and cut them, pielike, into 4 to 8 wedges. Fry as many at once as will fit without crowding, turning if necessary. Total cooking time will be about 2 minutes; the chips should not brown but just begin to darken in color. Remove with tongs or a slotted spoon and drain on paper towels or paper bags. Sprinkle with salt and serve hot or at room temperature.

Martha's Best Buttermilk Pancakes

I got another one from my Martha Stewart recipe book . I made this last night for dinner and the kids declared that they were the best pancakes they'd ever had. I guess they like buttermilk? 2 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 3 tablespoons sugar 2 large eggs, lightly beaten 3 cups buttermilk (I made buttermilk using this recipe ) 4 tablespoons unsalted butter, melted, plus 1/2 teaspoon for griddle Heat griddle to 375 degrees. Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl. Add eggs, buttermilk, and 4 tablespoons butter; whisk to combine. Batter should have small to medium lumps. Heat oven to 175 degrees. Test griddle by sprinkling a few drops of water on it. If water bounces and spatters off griddle, it is hot enough. Using a pastry brush, brush remaining 1/2 teaspoon of butter or reserved bacon fat onto griddle. Wipe off excess. Using a 4-ounce ladle, about 1/2 cup, pour
