Chocolate Bisquick Cookies

So, my 4 year old wanted to make cookies today...really good when you're trying to exercise/ lose weight...we made the cookies based on the following recipe . They're in the oven right now. Someone come eat them before I get hold of them. 1/4 cup butter, softened 3/4 cup brown sugar, firmly packed 1 egg 1 1/3 cup Bisquick 1/3 cup milk** 1/4 cup cocoa powder 1/2 to 1 tbsp finely ground coffee* Mix butter, sugar, and egg. Stir in Bisquick, cocoa powder, and milk. Drop by teaspoonfuls 2 inches apart on ungreased baking sheet. Bake at 375° for about 10 minutes, until lightly browned. *I only made five or six with the coffee grinds b/c I wasn't sure if it would change the texture - it didn't. I'm taking these puppies with me to class!! **The batter seemed a little thick so I added the milk. It wasn't originally in the recipe. Oh, and the cookies are huge . Woo for exercise!

So, my truck is broken. Which means if I want to get stuff done during the day while the kids are in school I'm gonna have to bike it until I can sell the truck (and the car that I still owe money on) ....which means I need to get back in the habit of biking. Today I biked over to the local gas station that lets you use their air compressor for free and inflated my tires - biking is way easier with air in the tires. You can read a bit more about my mileage and goals here . Oh, and if you don't mind praying that someone buys my broken cars that'd be great. My mom has a friend who is selling a station wagon for $650, I'm going to see if he'd be willing to take it to my mechanic so they can tell me if it is worth that. Personal Sized Apple Pie

Ok, this isn't a recipe, and the link I'm about to give you doesn't have a recipe on it, but frankly the idea is awesome. Stellan's mom made personal sized apple pies in custard cups...clever lady. Have I mentioned that she's an amazing photographer to boot? If you don't follow her blog you're missing out.

Steak with Mango-Peach Salsa

I got this puppy out of a Betty Crocker $1 cookbook from Target called "20-minute Meals;" apparently Rachel Ray needed to be beaten? Anyway, it was super easy and very yummy. The recipe is followed up by a couple quick notes. 1/4 c finely chopped red bell pepper 2 tsp finely chopped, seeded jalapeno chiles 1 tsp finely chopped or grated gingerroot OR 1/4 tsp ground ginger 1/4 c peach preserves 1 tbsp lime juice 1 small mango, cut lenthwise in half, pitted & chopped 4 boneless beef NY strip steaks 1-2 tsp Caribbean jerk seasoning* In medium bowl, mix bell pepper, chiles & gingerroot. Stir in preserves, lime juice & mango. Set oven control to broil. Sprinkle both sides of beef with jerk seasoning. Place on rack in broiler pan. Broil with tops 4-6 inches from heat 6-10 minutes, turning once, until desired doneness. Top with salsa & serve. NOTES *I didn't have this on hand so I just used my Kansas City Steak Seasoning. I know that's a really long title, but it was the only way to accurately convey this post from Joy. Dear My Bank, We’ve known each other for a long time.
