Adventures in the Kitchen: Sesame Chicken a la "J"

Image
So, my game plan tonight was to make this version of sesame chicken . I asked J if she wanted to help, she said no, so I started making dinner. I went to check on her brother and I came back just in time to see her tip the bottle of sesame seeds upside down. You know how in the movies something is falling and they shoot it at half speed to make it dramatic? You know how the inevitable "No!" really sounds like "NNNNNoooooooooooo!"? Totally what happened. I thanked her for her help and sent her off to finish her movie while I finished dinner. This is what she left me with: This is the end result: Considering there was way too much sesame, it was pretty good! I'll remake it without her help and let you know my final verdict. Recipe 1 cup all-purpose flour 1/2 cup toasted sesame seeds, divided 1 teaspoon black pepper 1 teaspoon Chinese five-spice powder 1 teaspoon crushed red pepper flakes (optional) 5 (6 ounce) skinless, boneless chicken breast ...

Sweet & Sour Chicken

Image
I'm a sucker for some good Chinese food, the problem is Tong's Tiki Hut ( Google it ) has absolutely ruined Chinese food for me. Their food is the standard by which I judge all other Chinese food. The problem is, I don't really live near Tong's and the cheapskate in me can't stand the idea of spending money on gas AND then on food - even for as much as I love it. I've tried making Chinese at home before, I'm never satisfied with the results - they've always been mediocre or down right bad. About a month I go I treated myself to a bargain bin Chinese cookbook from Barnes and Noble. Tonight I made my first recipe from it. Incidentally it was also the first time I've used my wok. The results? Actually not bad! I mean, it certainly wasn't Tong's and didn't taste the same as the sweet and sour chicken I'm used to, but the flavors were pretty good*. Coupled with a Trader Joe's egg roll, and I'm a pretty happy girl! 2 tbsp uns...

Sesame Chicken

I am a huge fan of Chinese food. When I was pregnant with my daughter I ate egg rolls for breakfast, lunch, and dinner a lot of the time. I know, it was a bit crazy - but the local restraunt loved me. Anyway, sesame chicken is one of my favorite dishes and this one got pretty close to the restaurant quality. Not quite, but in a pinch this will certainly suffice. I served this on a bed of microwavable noodles I picked up at Walgreens when I realized I didn't have any rice in the house. The rice would have been better. Oh well. Oh! Also feel free to throw in various veggies. I suggest baby corn and green peppers. 6 boneless skinless chicken breasts 1/4 cup honey 1/4 cup soy sauce 1/2 cup water 1 tablespoon cornstarch* 1/2-1 teaspoon ground ginger 1/2-1 teaspoon red pepper flakes (optional) 1 tablespoon toasted sesame seeds Cut chicken breast into 1 inch strips or bite size pieces. Heat a large non-stick skillet that has been sprayed with Pam, over medium-high heat. Cook chicken for ...

Mango Crab Salad Wonton Cups

Sharon posted this and I've officially added it to my list of things to try in the next couple of weeks. For the Wonton Cups: Cooking spray 18 wonton wrappers, thawed if frozen (we used potsticker wrappers) 2 teaspoons canola oil 1/4 teaspoon salt For the dressing: 1 teaspoon lime zest 2 tablespoons fresh lime juice 1/4 teaspoons salt 1/8 teaspoon black pepper 1/2 teaspoon dried hot red pepper flakes 2 tablespoons olive oil For the salad: 1/2 pound lump crabmeat, picked over (we used flaked crab but I suggest trying with lump) 1 stalk celery, finely diced 1/2 cup finely diced mango 1/4 cup thinly sliced scallions 2 tablespoons coarsely chopped fresh cilantro leaves Sweet Chili Sauce (optional) Preheat the oven to 375 degrees F. Spray 2 mini-muffin tins with cooking spray. Brush the wonton wrappers with oil, and place each wrapper into a section of a mini-muffin tin. Gently press each wrapper into the tin and arrange so that it forms a cup shape. The wrapper will overlap itself and...

May Meal Plan 1: Grilled Chicken with Spicy Ginger Vinaigrette

I got the recipe from the Food network . Over all I was pretty disappointed. It was ok, but definitely not something that stood out as fabulous. Perhaps if I had an egg roll & some stir fry veggies on the side it would have livened things up, but on its own I was disappointed. Cooking spray 6 boneless skinless chicken breast halves (about 5 ounces each) Salt and freshly ground black pepper 1/4 cup rice wine (mirin) 2 tablespoons vegetable or olive oil 1 teaspoon wasabi paste 2 teaspoons hot mustard (not powder) 2 teaspoons finely grated fresh ginger 2 teaspoons sesame oil 2 cups prepared cole slaw mix 1 tablespoon reduced-sodium soy sauce 16 wonton wrappers 1 tablespoon peanut oil 1/2 cup reduced-sodium chicken broth To make the chicken: Coat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat. Season both sides of chicken with salt and black pepper. Place chicken on hot pan and cook 3 to 5 minutes per side, until cooked through. In a small ...

Beef and Brocoli

I would post more often from Love and Olive Oil , but if I did then I may as well shut down my blog entirely and just tell you to read their's. I'm not shutting down, but do feel free to start stalking this site as well. You will not be disappointed by the quality of the recipes or the fine photographs of the food. Pictured left is their Beef and Brocoli . For marinade: 1 tablespoon rice vinegar 1 teaspoon sugar 1 teaspoon soy sauce 1 tablespoon water 1 tablespoon cornstarch 3/4 pound lean beef 1 1/4 cups oil, or as needed 2 tablespoons oyster sauce 2 tablespoons soy sauce 1 tablespoon water 1 teaspoon cornstarch 1 tablespoon water 1 pound fresh broccoli 2 garlic cloves 1/2 cup water 1/4 teaspoon salt, or to taste 1/2 teaspoon sugar, or to taste Directions Cut the beef across the grain into thin slices. Add the marinade ingredients, adding the cornstarch last (use your fingers to rub it in). Marinate the beef for 30 minutes. While the beef is marinating, prepare the sauce and v...
