Grasshopper Dessert

This one sounds pretty delicious, and the former pest control operator in me finds the name more than a little entertaining.. 1 cup chocolate wafer cookie crumbs 1/4 cup melted butter 1 jar (7 ounces) marshmallow creme 2 tablespoons creme de menthe 2 tablespoons creme de cacao green food coloring 1 cup whipping cream Preparation: Directions for grasshopper dessert Reserve about 1 tablespoon of cookie crumbs for the topping; toss remaining crumbs with melted butter. Press crumbs in bottom of an 8-inch square baking pan. In a small bowl, combine marshmallow, liqueurs, and food coloring if using. Whip until light and fluffy. Whip the whipping cream in another bowl; fold into the marshmallow mixture. Spoon over cookie crumb crust; sprinkle reserved crumbs over the top. Freeze grasshopper dessert for about 8 hours or overnight. Cut grasshopper dessert in squares.

Your responses brought me up to one less than what I need, which I'm sure I can get today. I didn't publish your comments to the blog though for privacy. Thanks!

Easy Chocolate Filled Angel Food Cake

I am going to make this sometime soon. If not this weekend then probably for a get together I'm having next month. Maybe both, it just sounds yummy. 1 10-inch angel food cake 32 large marshmallows 1/3 cup water 1/4 teaspoon salt 1 cup semisweet chocolate chips 1/2 teaspoon vanilla Whipping cream Preparation: Slice 1 inch off top of angel food cake and set aside. Cut down into cake and carefully remove core of the cake, leaving a wall approximately 1-inch thick on bottom and sides. Place cake on plate. In medium saucepan combine marshmallows, water, and salt. Cook, stirring constantly, over low heat until marshmallows have melted. Add chocolate chips and vanilla, stirring until chocolate has melted and mixture is smooth. Cool to room temperature. Whip 1 cup heavy whipping cream until soft peaks form; fold into the cooled chocolate mixture. Spoon chocolate mixture into hollowed cake; replace top section of cake. Frost with additional whipped cream or sprinkle with sifted confectione

Chocolate Frosting Recipe

I got this one from Every Day Mommy - it sounds delicious. I think I'm going to have to find an excuse to make this. Where's my calendar, I wonder if there are any birthdays coming up?? BARB TIGHE’S CHOCOLATE FROSTING 2 squares unsweetened baking chocolate 1/2 cup brown sugar 1/4 cup water 3 tbsp butter 1 tsp vanilla 2 cups Powdered sugar Melt the chocolate, brown sugar and water and bring just to a boil (don’t walk away from it) and remove from heat. Add butter and vanilla, stirring till melted. Add powdered sugar gradually to spreading consistency and mix on low with electric mixer. Be sure to add powdered sugar gradually as frosting can go from spreadable to concrete in a flash.

Reflections on 1 Peter 3:18

For Christ also hath once suffered for sins, the just for the unjust, that he might bring us to God , being put to death in the flesh, but quickened by the Spirit: (1 Peter 3:18) In my church's Wednesday night small group thing (I don't actually know what they call it) the pastor spent some time pulling out different things in this verse. At one point he wanted us to focus on the "that he might bring us to God" part of the verse. He referenced John Piper's "God is the Gospel" (I haven't read it) and how in it Piper makes the argument that the ultimate goal of the Gospel was that we might get God, that He would be our treasure, that we would have a relationship with our Father. As he was talking about this the parable of prodigal son (Luke 15:11-32) came to mind, as I reflected upon the son's return to his father's home I could see what my pastor was saying was true. The son comes back, repents, and his father throws a party - but at the end o

Resurrection Sunday

I'm going to be starting more "formal" discussions with the kids about the crucifixion and resurrection today as we lead up to Easter/ Resurrection Sunday...not to say we don't talk about it, but they've been getting a lot of Easter bunny talk at school the past couple of days and we've got to deal with that distraction. So I'm going to have them help me make the Empty Tomb treats for part of the fun. On a semi-unrelated note: I randomly switch between calling it Resurrection Sunday and Easter. I know some people who think it is dumb to call it anything but Easter and I know others who refuse to call it Easter because of some pagan ties to the name. Me? I try to call it Resurrection Sunday more than Easter simply because it shocks people into realizing (if only for a moment) that there is a reason we celebrate this holiday that has nothing to do with bunnies, candy, baby chicks, or spring. But I'm not a Nazi about it, though and sometimes I do call it

Why it is important to drink coffee before reading on April 1st

Alternatively titled "Brett Riggs is a big jerk." I have a routine in the morning. Shut off the alarm and sleep for 10 more minutes. Get up, make coffee, consume coffee, scan Google Reader and Twitter, wake the kids up, have breakfast, and get them to school. After that I try to have my quiet time, it is just what works best for me as I'm not coherent enough to do it first thing in the morning. Occasionally I oversleep and that throws everything off. I over slept today. Still, I had time to do all over the pre-taking the kids to school stuff, except for my coffee consumption and wasn't as leisurely. I had a notice from the Riggs Family Blog Facebook group saying there was an urgent update. My heart dropped. I held my breath and feverishly typed in the URL . After a redirect my heart sunk even more. Brent had been arrested and the blog apparently had been suspended by Blogger. On the first page there was a photo of him in a police car, the second page contained a mugsh
